  Sunshine covers: copy into assets/ and reference by bare filename

  Covers still didn't show: the PNGs existed and the absolute image-path
  was correct + readable, but Sunshine only reliably serves box art
  referenced by a BARE filename resolved against its own assets/ dir
  (that's how its cover-finder and every working entry do it) — absolute
  paths to arbitrary folders don't render in Moonlight.

  Now: transcode each cover to gs_.png in staging, the elevated
  apply step copies gs_.png into \assets, and image-path is
  the bare gs_.png. Clear deletes assets\gs_.png. The gs_ prefix
  keeps our art separate from the user's / Sunshine's own. Cover copy is
  best-effort (doesn't gate the apps.json write or restart).
